Two Ingredients Sweet Potato Waffles

Gluten-free and dairy-free waffles

Who doesn’t love a good stack of waffles?! Perfect for breakfast, lunch, dinner and even as a snack, waffles can be eaten both sweet and savoury style. Yum, love it!

I haven’t made waffles in a long time and even started to doubt if we still have the waffle maker. But thankfully no one had thrown it away, so yay for that. Today, I’m making some very special waffles that go perfectly with a Paleo, Whole30 or just a no-gluten lifestyle. I’m making sweet potato waffles. Delicious and naturally sweet waffles with only 2 ingredients. Now that’s easy to make!

Whenever I think of waffles, I think of that sweet smell that comes off it as soon as the batter starts baking/toasting/whatever its called with a waffles maker. But other than that sweet smell, I never add any sugar or sweetener to the batter. Plus, I also never eat waffles with anything sweet on it. There’s just something about eating waffles as a savoury dish. Delish with guacamole, a soft boiled or poached egg, tuna salad, or more as a toast style with some hummus on it.

In our home, 3 out of 4 people absolutely love these waffles. The other one – our oldest son Jiro -just wants me to “make normal waffles, mum!”. He tried it, first bite he liked it and then he was over it as soon as I answered his question about what it’s made of. Oops… The youngest devoured his first sweet potato and now loves it so much, he wants me to make it everyday. Also an oops, I guess, but a good one. Hehehe!

But I guess we could say that I’m a huge fan of sweet potatoes. They’re incredibly versatile, making it one of the easiest healthy ingredients to use in your kitchen. You can steam, roast, boil, or microwave them. I also make fries out of it and bake these in the oven. Just put it all on a tray, add some herbs and olive oil, add a whole marinated chicken to it and let it roast. So good!

Are sweet potatoes healthy?

I’d say yes! And a lot healthier than the average white potato too.

Scientists have found that sweet potatoes are among the best sources of Vitamin A, because they contain high levels of beta-carotene. Beta-carotene is transformed into vitamin A in our livers, with every molecule of beta-carotene producing two molecules of Vitamin A. It is said that one sweet potato provides more than 100% of the recommended daily allotment of vitamin A.

They’re also naturally packed with vitamin B5, vitamin C, potassium, magnesium, carotenoids, and lots more. But sweet potatoes are also lower in calories and carbohydrates than regular potatoes, making it an excellent choice for a healthy dinner.

Did you know that, because sweet potatoes contain a significant amount of magnesium, it can also help reduce stress and anxiety? Because that’s what magnesium is great for. Magnesium deficiency and depression are linked, because they both feature cell-mediated immune responses and body wide inflammation. And about that inflammation part…. Thanks to the significant amount of vitamins to be found in sweet potatoes – most of which have anti-inflammatory properties – sweet potatoes can even reduce inflammation in your body.

Wow, powerful stuff! I definitely believe we should all be adding this “superfood” to our diet, thanks to all those amazing properties and nutrients.

How to make sweet potato waffles?

1. Pick out some decent size sweet potatoes and wash them. You want to make sure there’s no soil still attached to it  since you’ll be using the entire potato, including the skin. I used a little hard brush to make sure I got everything off.

2. Grab a grater and a bucket or bowl. Time to grate the sweet potatoes! No need to boil them first, just use them raw. I made a mixture of finely grated potatoes and some rougher grated pieces, because that felt right to me the first time and also worked fine every time. Why change a good thing, right?

3. Turn the waffle maker on, so that it can start preheating.

4. Now add eggs to the grated potatoes. The amount of potatoes you’ve used, decided how much egg you should add. Per regular size potato, use 1 egg. Mix everything through and check to see if every bit is covered in egg. If not, add more egg. Add a bit of salt, if you want to. This balances out the sweetness a bit.

5. Spray enough cooking oil on the iron (both sides) or drizzle some olive oil on it. Really make sure there’s enough oil on it, as the sweet potato mixture tends to stick to the iron. Like, a lot!

6. Put enough of the mixture on the iron, so that it can form a decent size waffle. Close the waffle maker and now wait for it to finish. If you want to check the waffle in between, be careful opening the waffle maker because you don’t want to tear apart the waffle. Since it’s not like normal batter, the mixture really needs to set properly because otherwise it just keeps breaking.

7. Once done, carefully take the waffles out of the waffle maker. Perfect to eat directly with some delicious toppings, or let it cool down and freeze it. That way, you’ll have these amazing and nutritious waffles whenever you want to. Always a good item for breakfast!
